Everyone has been asking Mel how to make her delicious slice (this is why you come to Mysore on a Saturday guys, cos we get treats like this to devour afterwards…) and she has very kindly emailed me her recipe…So I’m sharing on the blog on the proviso that if you make it you MUST bring me some, okay?
Raw choc coconut slice
What you need
Base:
1 cup of raw nuts
1 cup of dates (plus water to blend)
1/2 cup of raw cacao powder
2 cups of shredded coconut
Pinch of Himalayan salt
Icing:
1 cup of dates (plus water to blend)
1/2 ripe banana
Dash of coconut oil – optional
1/4 cup shredded coconut
What to do
1. Blend almonds, cacao powder, coconut and salt together, then set aside. Blend 1 cup of the dates, adding some water so it blends nicely. Mix together with almond and coconut mixture.
2. Press into a slice tray and leave covered in the fridge for an hour or so.
3. Meanwhile, make the topping by blending together the second cup of dates with a little more cacao powder, water, banana and coconut oil if you wish. You’re aiming for a smooth texture that you can ‘ice’ the cake with.
4. Top with shredded coconut.
5. Devour!!
Note – you may need to slightly adjust your quantities depending on what type of dates you use and the size of your tray. I always play around with my concoctions adding a bit of this and a bit of that, so I can never be sure of the exact recipe! Be creative and enjoy!
Handy hint – soak dates in water overnight so they are easier to blend the next day.
